The Department of Viticulture and Enology and the Viticulture and Enology Research Center provides world-class undergraduate and graduate education, research, and outreach programs in sustainable and value added viticulture and enology; nationally and internationally recognized faculty and research staff; and a rigorous academic program of study accompanied by practical, hands-on training, and a continuously evolving program of education for growers, packers, winemakers and processors.

Students in the major have the unique advantage of having internships, fieldwork, and senior project opportunities in area wineries and vineyards. The Wine and Viticulture curriculum includes a mandatory internship, which promotes Cal Poly's "learn-by-doing" philosophy.
The enology concentration is a science-based curriculum designed to provide students with the chemistry, packaging, and regulatory knowledge to enter the wine industry as skilled winemakers. Our new enology teaching lab will soon be the site at which you will learn fermentation and analysis of the wines you study.

Class sizes are kept small to maximize the interactions with the instructors and among students. Most courses have lab components where students acquire hands-on experience, which is also applied and developed during the 3 co-op terms.
CCOVI’s undergraduate and graduate research programs provide Highly Qualified Personnel (HQP) with experience in cutting edge research in oenology, fermentation, viticulture, and sensory science, combined with almost 12 months of real industry experience through required Co-op workterms.
Over the past five years, 50 HQP have been trained through CCOVI from the research laboratories of Drs. Reynolds, Pickering and Inglis. With the training received by our undergraduates and their strong research skills, their competitive edge has resulted in a job placement rate of over 90% as winemakers, oenologists, assistant winemakers, vineyard managers, sensory scientists as well as sales and marketing personnel in various aspects of the grape and industry.
